Sesame Napa Slaw

This is something I put together after seeing somebody make a salad on TV or something. I got lucky with it. It seems to be really popular. Makes 4-6 generous servings.

Ingredients

Slaw Vegetables

  • 1 head of napa cabbage

  • 2 large carrots

  • 2 Scallions

  • Handful cilantro leaves

  • 1 can water chestnuts

  • 1 bell pepper (red looks good)

  • 1 tbsp sesame seeds

Dressing

  • ¼ c Rice Wine Vinegar

  • 1 c vegetable oill

  • 1 inch fresh ginger root

  • Juice of one lime (or lemon)

  • 1 tsp toasted sesame oil

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp sesame seeds

  • 1 tsp honey (optional)

  • Shake of garlic powder

Preparation

Finely shred the nappa cabbage. Julianne/matchstick cut one bell pepper and two carrots. Drain and add the water chestnuts. Chop the scallions Rip up a handful of cilantro and add to mix. Sprinkle with 1-2 tbsp sesame seeds. Toss, cover, and chill.

Make the dressing separately, I recommend in a jar. Mix the oil, vinegar, citrus juice, toasted sesame oil (only add more after tasting), a square inch of grated fresh ginger, salt, black pepper, and a shake of garlic powder. Put the lid on the jar and shake vigorously. Adjust the salt and acid to taste, adding more vinegar or lime/lemon juice if necessary. A tsp of honey may be a good addition. The dressing should taste very strong by itself and will be tamed when tossed on the vegetables.

Serve, chilled, immediately.
