Country Salmon Strew
A familiar Southern favorite. It ain’t fancy, but it’s good.

Ingredients
5 medium Vidalia (sweet) onions
2-3 slices of cooked bacon
1 tsp bacon drippings
2 1-pound cans of whole or diced tomatoes
1 14-ounce bottle of ketchup
2 c water
1 tbsp Worchestershire sauce
1 tbsp steak sauce of choice
1 1-pound can of salmon
0.25 tsp fresh-ground black pepper
1 tsp salt
Prepared jasmine (or basmati or other) rice
Preparation
Chop onions and cook in bacon drippings until tender. While they cook, clean any skin from canned salmon meat.
Break up the bacon into the onions. Add the picked salmon and other ingredients and simmer over medium heat for at least 30 minutes.
Serve over white rice.
