Buttermilk Pancakes

Since itโ€™s a recipe from Aunt Lynn, it has to be good.  Makes 4-6 large pancakes.

  • 1 c self rising flour
  • 1 c buttermilk
  • 1 egg
  • 2 tbsp oil
  • 1 tbsp sugar
  • ยผ tsp baking soda
  • 1 c berries (optional)


Mix all ingredients just until well blended.  As with all pancake batters, over-mixing will make the final product rubbery.

Cook in a pre-heated, oiled skillet over medium or med-low heat.

You know it's time to flip the cake when the bubbles on the top surface stop closing themselves back up, and/or amount of steam coming form the cake decreased.
