Sour Cream Chicken

Bombastic Easy Sour Cream Chicken

Super delicious, super easy to make. Possibly addictive. Feel free to skip the pasta or substitute vegetables to your heart’s desire. Takes about 25 minutes to make start to finish. Serves 1-6 depending on how addicted you are.

Ingredients

  • 16 oz cauliflower florets, fresh or frozen
  • 4 oz egg noodles or other pasta (optional)
  • 4 tbsp butter
  • 2 lb chicken, cut in bite-size pieces
  • 1 tbsp minced garlic
  • ½ to 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme, dried or fresh
  • Celery to taste, sliced thin
  • 1 pt mushrooms, sliced
  • 1 can water chestnuts, sliced into sticks
  • 16 oz sour cream

Preparation

Prepare the cauliflower and/or pasta separately. If using pasta, prepare it under-cooked so that the pasta can absorb some of the sauce and flavor once incorporated into the final dish.

For the main dish, melt the butter in deep saute pan over medium heat and saute celery until almost soft.

Add the chicken pieces, salt, pepper, and thyme and cook about halfway.

Add garlic and mushrooms to pan; allow to cook until mushrooms are cooked through and chicken is done.

Fold in water chestnuts, sour cream, and cooked cauliflower and pasta.

Heat slowly until warmed through and combined. Taste for salt; this dish often requires a good bit.

Eat it all.
